This properly conditioned dough will be soft, puffy, and ready to be stretched. The dough cannot be flattened at this point and the cook will need to utilize a dough scraper to lift the ball of dough out of its preparation tray and set it on a floured work surface. The dough is then sprinkled with flour and pushed down upon. This process is specific, as the pressing of the dough needs to occur from the center, working outward, rotating the dough about a quarter turn as the cook presses. If this process if done correctly, the dough should remain round throughout the entire process. During this process, the dough will appear to almost double in size and, at this point, the tossing of the dough can begin. The tossing of the dough also has to be done systematically, making a fist and draping the dough over one hand while sliding the other hand underneath the dough.
